Ingredients:
- 1.5 cup Reds Gluten-Free Pancake Mix
- 2 tbsp Coconut oil (melted)
- 2 large eggs
- 1/2 cup Grass Fed Vanilla Protein
- 1/4 cup Chia seeds
- 1/4 cup ground flaxseed
- 1 cup farm fresh blueberries
- Strawberries & Bananas (optional)
Directions:
- In large mixing bowl combine pancake mix, coconut oil, eggs, protein powder, chia seeds, and flaxseed. Mix thoroughly.
- Pour 1/2 cup mixture onto heated degreased skillet. Cook on low heat. When small bubble appear add fresh blueberries spaced evenly.
- Flip pancake. Cook until golden brown.
- Makes approx. 1 dozen 3-4 inch pancakes.
